Spain's specialty coffee scene expands with artisan roasters and traceable beans

The specialty coffee market in Spain is shifting from traditional cafés to artisan‑focused coffee houses. Bars across the country, from Madrid to Alcalá de Henares and Seville, are emphasizing bean origin, barista expertise and precise brewing methods. To earn the Specialty Coffee Association’s “specialty” label, a coffee must score at least 80 points in a professional cupping, assessing aroma, flavor, acidity, body and defects. Local shops such as Refuge Coffee and Inefable Coffee highlight full traceability—from altitude and climate to processing—allowing prices of €2.50‑€5 per cup.

Baristas are now trained professionals who manage the entire coffee journey, and small‑batch roasting is common. The trend is creating a multi‑billion‑euro market and reshaping Spanish coffee culture toward a slower, sensory experience.
