Spanish chefs launch initiative to promote sustainable lamb

Seven prominent Spanish chefs, many holding Michelin stars, are participating in a new culinary initiative titled ‘La cocina vuelve al pueblo’ (Cooking returns to the village). Launched by Interovic, the campaign aims to highlight sustainable lamb, goat, and kid meat while promoting extensive livestock farming and rural territories.

Throughout October, these chefs will feature specific recipes using these meats on their menus to connect high-end urban culinary techniques with local, rural origins. For example, chef Samuel Moreno of Molino de Alcuneza in Guadalajara is featuring interior rice with lamb sweetbreads as part of this movement to bridge the gap between city dining and countryside production.
