The culinary scene in Alcalá de Henares is experiencing a surge in popularity driven by the Betanzos-style potato omelet. Taberna 7 has become a central figure in this trend, offering a neo-tavern concept that focuses on seasonal products and precise techniques. The establishment’s signature Galician-style omelet is developed with the expertise of Alberto García Ponte, a two-time Spanish omelet champion.

The recipe is characterized by a specific potato frying technique, a precise egg-to-potato ratio, and an extremely juicy, semi-liquid texture. To accommodate various tastes, the tavern offers multiple versions, including a truffle-infused option.

In Zahara de los Atunes, the 13th edition of the Ruta del Retinto is scheduled for October 7 to 12, 2026. This gastronomic route celebrates the local Retinto beef breed, showcasing how regional chefs transform the indigenous meat through tradition and innovation.
