The village of Spilinga, located near the coastal town of Tropea in Calabria, Italy, identifies itself as the world capital of Nduja, a traditional raw spreadable sausage.

Nduja is a staple of Calabrian cuisine, made from a mixture of lean and fatty pork seasoned with spicy peperoncini. It is commonly used as a topping for pizza, bread, and pasta. Francesco Fiamingo, founder of the restaurant Madame Nduille, operates a sausage factory in Spilinga and exports the product internationally.

Historically, the name is thought to have evolved from the Italianized 'Andouglia,' reflecting the region's past under French rule within the Kingdom of Naples.
