Sturm: The traditional seasonal fermented grape beverage of Austria
Sturm is a seasonal, partially fermented grape juice that serves as a precursor to wine. Characterized by its cloudy appearance, natural yeast, and sparkling texture, it is a traditional autumn beverage in Austria, typically available from late summer through the end of the year.
Regional varieties exist across the country, such as Schilchersturm in Styria and Uhudlersturm in Burgenland. In some eastern regions, an even earlier stage known as Staubiger is produced.
Cultural traditions surround the consumption of Sturm. Unlike finished wine, it is considered improper to toast with 'Prost'; instead, the phrase 'Mahlzeit' is used. Additionally, traditional etiquette suggests holding the glass in the left hand.
