Summer harvest preservation through freezing

To preserve summer harvests, hobby gardeners can utilize freezing for various fruits and vegetables. According to the Verbraucherzentrale Brandenburg, freezing is a practical solution for managing seasonal surpluses.

When freezing, it is important to consider water content. Fruits generally freeze well, but vegetables with very high water content, such as lettuce, tomatoes, or cucumbers, may lose their structure and become mushy upon thawing. Raw potatoes are also not recommended for freezing due to changes in consistency.

Vegetables with lower water content, such as carrots, peas, or various types of cabbage, can be frozen effectively after blanching. The Bundeszentrum für Ernährung (BZfE) recommends boiling the vegetables for a few minutes and then cooling them in ice water to better preserve color, flavor, and nutrients. Additionally, fresh herbs can be frozen in portions using ice cube trays, and ripe bananas can be frozen to create vegan ‘nicecream’.
