Tarifa to host experimental production of wild organic olive oil
The Jaén-based company AOVE Baby has launched an experimental project to produce ‘Acebuche Salvaje’, a gourmet organic extra virgin olive oil made from wild olive trees (acebuches) in the public mountains of Tarifa.
With authorization from the Junta de Andalucía and the Tarifa City Council, the company is permitted to conduct this extraordinary harvesting of natural-generation fruit in various municipal areas until 2029. Key locations for the harvest include Betis, Facinas, Saladavieja, and Puertollano, among others.
The resulting oil is described as having a potent, herbaceous, and fruity flavor profile, attributed to the unique environmental conditions of the Tarifa region, including its proximity to the Strait of Gibraltar and the meeting of the Mediterranean and Atlantic waters. The company aims to use Tarifa as a central hub for the commercial relaunch of the product, which has already seen favorable responses in Asian markets.
