Tejuino, the traditional fermented corn drink popular in Jalisco

Tejuino is a fermented corn beverage that is a staple of daily life in Jalisco, especially in Guadalajara. It is prepared with corn masa, water, piloncillo, lemon, salt and often a splash of lemon ice, and is typically sold for 20–40 pesos per glass.

Three well‑known vendors highlighted for their authentic recipes are Tejuino Marcelino on Calle Angulo (operating since 1955), Tejuinos El Güero in the Arboledas colonia, and Tejuino San Onofre in Guadalajara’s historic centre, each offering variations that may include chile or other local ingredients.

Beyond its refreshing taste, tejuino reflects indigenous culinary traditions, linking corn cultivation, nixtamalisation, and family‑passed preparation methods, and serves as a cultural marker of western Mexico.
