Tomato and Cucumber Salad: Nutrition Myth Debunked and Turkish Recipe Gains Polish Fans

Polish dietitians explain that the long‑standing belief that cucumbers destroy the vitamin C in tomatoes is only partly true. Cucumbers contain the enzyme ascorbinase, which can slowly break down some vitamin C, but the loss is limited. Adding an acidic ingredient such as lemon juice or vinegar reduces the enzyme’s activity, and olive oil enhances lycopene absorption from tomatoes.

A Turkish‑style shepherd’s salad, popular in Poland, combines finely diced tomatoes, cucumbers (kept with skin), red onion, parsley, and optional mint, dressed with olive oil, lemon juice, salt and pepper.
