Tomato consumption linked to improved cognitive function

Research conducted by scientists at the University of Barcelona suggests that regular tomato consumption may improve cognitive abilities. In a randomized crossover clinical trial published in the journal ‘Antioxidants’, 42 healthy adults consumed 35 grams of tomato puree daily for three months.

The study observed improvements in selective attention and, to a lesser extent, associative memory. Brain imaging conducted on 14 participants supported these findings. The benefits are attributed to lycopene, a powerful antioxidant responsible for the red pigment in tomatoes, which can cross the blood-brain barrier and potentially reduce neurological inflammation.

Beyond tomatoes, the natural pigments in vegetables serve as indicators of nutritional content. For instance, orange vegetables like carrots and pumpkins are rich in beta-carotene, which the body converts to Vitamin A to support vision and immune function. Other pigments, such as anthocyanins, also provide essential antioxidant properties.
