Tomato harvesting and preservation techniques

As the tomato season concludes, gardeners can utilize specific techniques to preserve remaining harvests or accelerate the ripening of green fruit.

To preserve ripe tomatoes, one method involves slow-roasting them in the oven to evaporate excess water and concentrate natural sugars. Once cooled, these roasted tomatoes can be stored in olive oil with herbs like thyme, oregano, or basil. This method allows them to last for several weeks in the refrigerator or be frozen for long-term use.

For green tomatoes that have not yet ripened due to cooling temperatures and decreasing sunlight, gardeners can encourage ripening by removing new flowers and side shoots to redirect the plant's energy toward existing fruit. Additionally, removing leaves that shade the fruit can increase light exposure. If frost is imminent, fully developed green tomatoes can be harvested and left to ripen indoors at room temperature, though they should be kept out of the refrigerator to avoid quality loss.
