Tomato preservation and ripening techniques

Managing tomato harvests and home preservation requires specific technical attention to ensure quality and safety. Because tomatoes are climacteric fruits, they can continue to ripen after being picked due to ethylene gas production and respiration.

Optimal ripening occurs at temperatures between 18–25 °C, which facilitates the synthesis of carotenoids like lycopene. Temperatures exceeding 28–30 °C can inhibit color development, while temperatures below 12–13 °C may cause chilling injury, such as internal darkening and loss of texture. For best results, it is recommended to harvest fruits at the ‘breaker’ or ‘turning’ stage.

When preparing homemade tomato sauce, several critical errors must be avoided to prevent foodborne illnesses, including botulism. Key safety measures include selecting unblemished fruit, maintaining strict hygiene of hands and utensils, ensuring proper acidity, and following correct pasteurization and vacuum-sealing procedures. Common mistakes include using damaged jars, improper cooking temperatures, or overfilling containers.
