Tomato culinary guide: varieties, preservation, and storage

Various culinary insights regarding tomatoes highlight different varieties, preservation methods, and storage techniques to maintain flavor and nutrition.

Black tomatoes, such as Black Krim, Black Prince, and the Indigo group, are noted for their deep colors and exceptionally sweet, juicy flavor profiles. Specifically, Black Cherry varieties are recommended for raw consumption due to their thin skin and high sweetness.

For preserving the harvest, a 2:2 ratio method is suggested for making tomato puree: adding 2 tablespoons of sugar and 2 teaspoons of salt for every 5 kg of tomatoes. Using brown sugar can introduce a caramel note to the final product.

To prevent loss of aroma and texture, tomatoes should not be stored in the refrigerator, as temperatures below 10°C halt ethylene production and lead to a mealy texture. Additionally, they should be kept out of plastic packaging to avoid moisture buildup and mold, ideally stored in a shaded, well-ventilated area at moderate temperatures.
