Tomato sauce preservation: importance of boiling jars for safety
Properly preparing jars is essential for safe homemade tomato sauce preservation. A common mistake in home canning is pouring hot sauce into jars that have only been rinsed, which can leave invisible bacteria, yeasts, and molds on the glass, threads, and lids.
These microorganisms can thrive in a sealed environment, leading to fermentation, gas production, and spoiled flavors. In extreme cases, improper sterilization poses a risk of botulism, a serious form of food poisoning.
To ensure food safety, experts recommend a two-step process: boiling the empty jars in water before filling them to eliminate germs and preheat the glass, followed by a formal sterilization process, such as a water bath, after the jars are filled and sealed. It is also advised to inspect jars for cracks and use new rubber seals for models that require them.
