Trabzon fish markets see high demand amid bonito abundance
The new fishing season in the Black Sea has brought an abundance of bonito (palamut) to the markets of Trabzon. Local fishmongers report that bonito is currently the most preferred option among consumers, with individual fish priced between 100 and 125 Turkish Liras. Other seafood prices in the region include anchovy (istavrit) at 100 Liras per kilogram, salmon at 200 Liras, sea bream (çipura) at 500 Liras, and sea bass (levrek) at 600 Liras per kilogram.
Local business operators have noted that the current season is exceptionally bountiful, with some claiming it is the most productive period seen in 20 years. In addition to traditional cooking methods, new culinary trends such as marinated bonito skewers (palamut şiş) are gaining popularity in Trabzon restaurants, offering a lighter alternative for consumers.
While the abundance of bonito is high, fishermen expect anchovy (hamsi) supplies to remain more limited for the time being. Additionally, fishmongers noted that high temperatures can sometimes affect the physical appearance of the fish, making them appear softer, though they maintain that the stock remains fresh.
