Traditional bakeries in Cadaqués and Ibiza preserve local pastry customs

In Cadaqués, the historic pastry shop Can Cabrisas faces an uncertain future as the fourth generation of the Cabrisas family prepares to retire on October 31. The establishment is famous for its ‘taps de Cadaqués’, spongey small cakes shaped like cava bottle stoppers or mushrooms. During the summer, the bakery produces up to 4,000 taps daily. The recipe, a family secret created by Sebastià Cabrisas in the 1930s, remains a local staple often paired with Empordà garnach wine.

Meanwhile, in Ibiza, Forn Can Bufí is preparing for the All Saints' Day tradition of making panellets. The bakery maintains traditional recipes using natural almonds and domestic pine nuts, avoiding additives or preservatives. The establishment operates ten locations across the island, focusing on classic almond and pine nut varieties to honor historical Ibicenco home cooking methods.
