Traditional Bosnian sarma preparation methods and ingredients
Traditional Bosnian sarma can be prepared using either rice or bulgur as the primary grain for the filling. Using bulgur, a crushed wheat, allows the mixture to absorb meat juices and sauerkraut liquid more effectively while maintaining better texture during long cooking processes. This variation is influenced by Oriental cuisine and is common in certain regions of Bosnia.
For standard recipes using rice, the recommended ratio for 1 kg of ground meat is 100–150 g of rice and two medium onions. To ensure a juicy and loose filling rather than a dense mass, it is advised not to overfill or over-tighten the cabbage leaves, as the grains will expand during cooking. The meat should only be lightly sautéed with onions before being mixed with the grains and spices to prevent it from becoming overcooked within the cabbage rolls.
