Traditional broth preparation techniques and Silesian recipes
Traditional methods for preparing broth emphasize slow cooking and high-quality ingredients to achieve depth of flavor and clarity. Michał Froehlich, known as Pan Babcia, shares a Silesian-style recipe in his upcoming book, ‘Pan Babcia warzy po ślōnsku’, scheduled for release on October 14, 2026.
His specific method, referred to as ‘nudelzupa’, involves a slow simmering process of approximately two hours over a very low heat. The recipe utilizes a combination of duck, beef marrow bones, and turkey offal, such as hearts and gizzards, to build a complex flavor profile.
General culinary principles for a clear broth suggest using fresh, non-frozen meat and vegetables including carrots, parsley root, celery, leeks, and onion. To ensure clarity, it is recommended to skim off impurities during the initial boiling stage and to simmer the liquid gently for three to four hours, adding salt only at the end of the process.
