Traditional confectionery and pastry trends in Spain

Various culinary initiatives are highlighting traditional sweets and specialized pastry trends across Spain. In the Horta Sud region, students from the Escola de Hostaleria de l’IES Guillem d’Alcalà de la Pobla de Farnals have launched the ‘Coca del Poble’. This solidarity project uses a traditional pumpkin, almond, and orange recipe to support bakeries and ovens affected by the DANA weather event.

In Barcelona, a new pastry shop named Los Flanes has opened in the Gràcia neighborhood. Founded by pastry chef Adrián Ramírez, the establishment focuses exclusively on flan, including the French Parisian style, reflecting a growing trend of niche dessert businesses in the city.

Additionally, the company Turrones Picó y Galiana is participating in the 680th edition of the Fira de Tots Sants de Cocentaina. The company is showcasing artisanal turrón from Xixona, utilizing ingredients such as Marcona almonds and rosemary honey, alongside innovative offerings like macadamia nut and chocolate-covered cranberry combinations.
