Traditional food preparation begins in Oğuzeli and Karapınar

In Turkey, traditional agricultural practices for winter food preparation are underway in the regions of Oğuzeli and Karapınar.

In Oğuzeli, the 2026 eggplant harvest season has commenced. Workers collect fresh eggplants, which are then hollowed out by hand and strung on ropes to dry in the sun. This labor-intensive process prepares the product for winter use and export. Fresh eggplants are priced at 18 TL per kilogram, while batches of 1,000 dried eggplants can fetch between 3,500 and 4,000 TL. Farmers report an average yield of 400 to 500 kilograms per decare.

In Karapınar, following the wheat harvest, families have begun the centuries-old tradition of making bulgur. The process involves washing wheat, boiling it in large cauldrons for two to three hours, and spreading it on rooftops or open areas to dry for three to four days. Once dried, the wheat is cleaned of impurities and processed into bulgur. Many families produce bulgur for both personal consumption and for sale to customers outside the district via cargo services.
