Traditional food preservation methods continue in Turkey
In various regions of Turkey, traditional methods of food preservation are being utilized to prepare for the winter season. In the Gercüş district of Batman, specifically in Gökçepınar village, producers are harvesting grapes to create natural dried raisins. The process involves cleaning the clusters, soaking them in a special mixture to maintain quality, and spreading them under the sun for approximately 10 days.
Similarly, in the Şebinkarahisar district of Giresun, residents are engaged in the labor-intensive process of making pestil from mulberries. The production involves boiling ripe mulberries in large cauldrons to extract their essence, stirring the mixture constantly to achieve the correct consistency, and spreading it in thin layers on cloths to dry in the sun. These traditional products serve as natural snacks and staples for the winter months.
