Traditional food preservation recipes for winter

Various traditional recipes for food preservation and winter pantry preparation are detailed, focusing on jams and pickled vegetables.

One method involves preparing fig jam by boiling figs with sugar and lemon juice for approximately one hour until a thick paste forms. The process includes sterilizing jars in an oven at 150 degrees Celsius to ensure proper storage.

Other techniques cover pickling vegetables. For bell peppers (gogoșari) in vinegar, a mixture of vinegar, water, salt, sugar, bay leaves, pepper, and mustard is used. To maintain a crunchy texture, the peppers should only be briefly scalded in hot liquid rather than boiled extensively.

Additionally, green gooseberries (gogonele) can be pickled in a simple brine made of water and salt. This method incorporates aromatics such as carrots, horseradish, celery, garlic, thyme, dill, and hot peppers to enhance flavor and preservation.
