Traditional kajmak baklava recipe

A traditional recipe for baklava featuring a unique filling made from young, unsalted kajmak, semolina, and raisins. The dessert is prepared by layering pastry sheets with a creamy mixture of egg yolks, sugar, lemon zest, and lemon juice, followed by egg whites and raisins.

The pastry is baked at 180°C for approximately 40 to 50 minutes until golden. Once baked, the hot baklava is soaked in a sweet syrup made from sugar, water, and vanilla sugar to ensure the layers absorb the liquid.
