Traditional techniques for enhancing broth aroma and color
Traditional methods for preparing broth (rosół) focus on maximizing aroma and achieving a natural golden color without the use of artificial bouillon cubes or dyes.
To enhance the scent, it is recommended to avoid boiling spices like allspice and black pepper for several hours, as high temperatures can destroy essential oils and leave a bitter taste. Instead, a technique involves roasting and crushing spices in a dry pan approximately 20 to 30 minutes before the soup is finished cooking.
For a deep, golden color, natural ingredients such as charred onions, ripe carrots, and a small amount of turmeric can be used. Charring the cut side of an onion on a dry pan or over a flame adds a caramel note and deepens the hue. Additionally, a single leaf of Savoy cabbage can subtly warm the color, while fresh lovage can enhance the overall flavor profile.
