Traditional techniques for successful sauerkraut fermentation

Traditional methods for preparing sauerkraut emphasize the importance of salt ratios, temperature control, and proper submersion to ensure successful fermentation and prevent spoilage.

For smaller batches, fermenting shredded cabbage in a glass jar is an effective method. A recommended ratio is approximately 2% salt by weight of the cabbage (about 20 grams of salt per kilogram). The cabbage should be massaged with salt to release its juices and packed tightly into a clean jar to minimize air pockets, ensuring the liquid covers the cabbage entirely.

When fermenting whole heads in brine, a ratio of 40 grams of salt per liter of water is suggested. To ensure the brine penetrates the cabbage, the base of each head can be cut into a cross shape. Maintaining a consistent temperature between 15 and 18 degrees Celsius during the initial phase is ideal. Additionally, regular brine circulation—pouring the liquid from the bottom to the top every few days during the first ten days—helps distribute salt evenly and supports healthy fermentation.
