Traditional winter preserve recipes for peppers and green tomatoes
As autumn approaches, traditional methods for preparing winter preserves are being highlighted. One popular method involves making a brine for peppers stuffed with sour cabbage. The standard brine recipe for 4 liters of liquid consists of 1 liter of 9% alcohol vinegar, 3 to 4 tablespoons of salt, and 3 to 4 tablespoons of sugar, seasoned with peppercorns and bay leaves. The mixture should be boiled for 5 to 10 minutes and allowed to cool completely before being poured over the stuffed peppers.
Another seasonal preparation focuses on utilizing green tomatoes that have not ripened due to lack of sunlight. These can be preserved with garlic by blanching tomato slices in a mixture of water, vinegar, salt, and sugar for approximately one minute. The slices are then layered in jars with minced garlic. If oil is added to the jars, the preserves must be stored in a refrigerator rather than a pantry.
