Turkey cooking guide: timing and temperature essentials
Cooking a turkey requires careful timing and temperature management to ensure food safety and quality. For a deboned turkey, cooking typically takes approximately 12 to 15 minutes per pound at 350°F (175°C). Deboning the bird can lead to more even cooking and faster preparation times.
For whole turkeys, timing varies based on whether the bird is stuffed. At 350°F, an unstuffed turkey requires roughly 13 minutes per pound, while a stuffed turkey requires approximately 15 minutes per pound. Adjustments to temperature affect these estimates: cooking at 325°F adds 2 to 3 minutes per pound, while higher temperatures like 375°F or 400°F reduce the time per pound.
Regardless of the method, the most critical factor for safety is using a meat thermometer. The turkey is considered done when it reaches a safe internal temperature of 165°F (74°C) in the thickest part of the breast, the innermost thigh, and any stuffing. It is also recommended to let the bird rest for 20 to 30 minutes before carving.
