Turkish köfte cooking tips highlight traditional recipes and preparation methods

Two recent food features outline traditional Turkish köfte (meatball) preparation. The first traces the dish’s origins to Central Asia and Mesopotamia, notes its early appearance as "köfte ekmek" in Istanbul in 1726, and emphasizes the need for high‑quality meat, preferably sourced from the Balıkesir region, with a recommended 77 % lean meat and 23 % fat and additives such as breadcrumbs or onion.

The second piece shares practical advice from Urfalı masters: use moderately fatty ground beef, knead the mixture for eight to ten minutes, chill the formed patties for at least 30 minutes, add grated onion with controlled moisture, limit spices to salt, pepper, cumin and a modest amount of red pepper, and finish cooking on a very hot grill or pan to retain juiciness.
