Turkish regional recipes trend following MasterChef appearances

Traditional Turkish regional dishes from Malatya and Elazığ have gained renewed interest following appearances on MasterChef.

In Malatya, the traditional 'elmalı köfte' is prepared using fine bulgur (yarma), yogurt, and sour apples. The recipe involves boiling bulgur meatballs and combining them with a yogurt sauce enriched with plum sourness and egg yolk, topped with sautéed onions in butter.

From Elazığ, the 'patila' pastry has also become a topic of discussion. This dish features a thin dough made from flour, yeast, and salt, filled with a mixture of sautéed onions and dried basil. The dough is prepared by resting it before being shaped into small pieces for cooking.
