Universidad Autónoma de Querétaro advances food science and urban planning

The Universidad Autónoma de Querétaro (UAQ) is advancing research and professional training initiatives in Mexico.

In the scientific sector, Rector Silvia Amaya reported that researchers are developing bioactive ingredients from food industry byproducts. By utilizing materials such as whey, mango peels, bones, and hardened beans, the university aims to create antimicrobial, anti-hypertensive, and preservative compounds. This research focuses on transforming potential waste into functional ingredients for the food industry, including work on microencapsulation processes.

Simultaneously, the UAQ Faculty of Engineering and the University Research Center for Design, Architecture, and Urbanism (CIUDAU) have launched the ‘Crear Ciudad’ diploma program. In collaboration with the Querétaro State Government and the Secretariat of Urban Development and Public Works (SDUOP), the program addresses urban growth, public works administration, and efficient city modeling. The curriculum covers territorial planning, mobility, green infrastructure, and urban stability.
