University of Freiburg study links sauerkraut to lower blood pressure
A study conducted by researchers at the University of Freiburg suggests that consuming sauerkraut may contribute to lowering blood pressure. In a crossover trial involving 87 healthy adults, participants consumed 100 grams of sauerkraut daily for one month.
The results showed a measurable average drop in systolic blood pressure between 1.5 and 2.5 points. The benefits were observed in both fresh and pasteurized versions of the fermented cabbage, suggesting that compounds produced during the fermentation process, rather than live bacteria, may be responsible for the effect. Participants under the age of 50 showed the most significant reductions in both systolic and diastolic readings.
