University of Missouri Develops Stable Purple Corn Food Dye Alternative

Researchers at the University of Missouri, led by Pavel Somavat and Sherry Flint‑Garcia, have shown that anthocyanin pigments from a special variety of purple corn can serve as a natural replacement for synthetic food dyes. The pigments, concentrated in the pericarp of the kernels, remained about 75 % intact after one hour of heating at temperatures common in food processing. By coating the pigments with food‑grade protective materials, stability rose to nearly 97 % for some compounds, creating shelf‑stable powders suitable for manufacturing.

The natural colorants also provide antioxidant benefits linked to reduced inflammation and heart health, offering both visual appeal and nutritional value. The breakthrough could help food manufacturers phase out petroleum‑based dyes such as Red No. 40, while opening new market opportunities for Midwest corn growers.
