University of São Paulo develops electronic tongue to detect avian flu

Researchers at the University of São Paulo’s Institute of Physics of São Carlos (IFSC) have developed an ‘electronic tongue’ capable of detecting H5N1 avian influenza antibodies in just six minutes. The device, which utilizes artificial intelligence, demonstrated a 98.6% precision rate during tests published in the journal ACS Applied Nano Materials.

The technology mimics human taste buds by using four sensors to measure the electrical properties of a sample. Integrated AI then analyzes these signals to identify the specific patterns created by antibodies. The sensor structure is environmentally conscious, utilizing plant-based materials such as zein from corn, jackfruit components, and jack bean proteins, alongside silk protein coating gold particles.

While the device is highly sensitive—capable of detecting diluted salt at levels below human perception—large-scale application is currently limited by the small number of units available. The research, coordinated by Professor Osvaldo Novais de Oliveira Junior, offers a rapid detection method that could assist in containing avian influenza outbreaks.
