U.S. Beef Prices Stay High as Pork and Dairy‑Beef Strategies Offer Cheaper Alternatives

U.S. cattle cycle conditions are expected to keep beef prices elevated through at least next year, with ground beef averaging $7.95 per pound. Analysts point to ground pork as a cheaper substitute, priced around $4.81 per pound, and pork chops costing roughly one‑third of beef steak. Processors such as Smithfield Foods are expanding precut and marinated pork products to compete with beef and chicken, though industry insiders say any shift away from beef will be gradual.

Dairy producers are also turning to beef‑on‑dairy operations to improve profitability. Tim Van Hofwegen of Farm Credit Services of America notes that revenue from beef‑on‑dairy calves and cull cows helped offset lower milk prices in 2025. Farmers are increasingly selecting animals for dual‑purpose breeding, aiming to boost genetic quality and capture additional market value from each animal.
