U.S. dairy industry sees $13 billion in processing investment

The United States dairy industry is undergoing significant structural changes driven by massive capital investment and a shift in milk composition. Over the past year, the industry has seen $13 billion in dairy processing investments across the country, involving companies such as Chobani, Fairlife, and Hilmar Cheese. Gregg Doud, CEO of the National Milk Producers Federation, noted that this level of investment is unprecedented in agricultural history, though he cautioned that high diesel prices and shifting supply chain logistics may present long-term challenges.

Simultaneously, the industry is working to increase milk protein levels to better compete in global export markets. While butterfat levels have risen sharply over the last decade, protein growth has lagged behind competitors like the European Union and New Zealand. According to a report from CoBank, milk protein production began outpacing butterfat growth last August. This shift is driven by new pricing formulas and the needs of domestic cheesemakers, who require a more balanced ratio of protein to butterfat for optimal production yields and cheese quality.
