U.S. restaurant operators adopt new menu strategies amid shifting consumer preferences

Restaurant operators are responding to evolving diner habits by making plant‑based meals easier to find and order. Global research shows the vegan food market surpassed $22 billion in 2025 and is projected to grow double‑digit annually. About 42 % of consumers identify as flexitarians, and in the United States 54 % of adults say they sometimes eat vegetarian meals when dining out. Clear labeling of plant‑based options is seen as essential for attracting groups that include vegans or vegetarians, especially for shared meals.

At the same time, limited‑time offers (LTOs) have become a core menu tactic in the United States. Tastewise data records 93,652 LTO items across 22,553 restaurants, indicating that brands rely on short‑duration dishes to refresh menus. While social chatter about LTOs has softened, consumer interest remains strong, with baby boomers and influencer audiences showing notable engagement. Operators are encouraged to match LTOs to specific occasions and proven audience preferences rather than pursuing mere novelty.
