Verica Milošević preserves traditional ajvar making methods
Verica Milošević, a producer from Parteš in the Kosovo-Pomoravlje region, is preparing her traditional homemade ajvar using a method that avoids preservatives and additives. She emphasizes that the quality of the product depends entirely on the peppers, which she grows, nurtures, and harvests herself without using pesticides.
Despite her efforts to expand production this year, severe weather including hail has damaged a significant portion of her crops and her greenhouses.
The traditional preparation process involves washing, draining, and roasting the peppers on a wood-burning stove. Milošević maintains that smaller batches result in better flavor and prefers to stick to ancestral methods rather than modernizing the recipe. She frequently sells her products at local fairs, including recent events in Gračanica and Kumanovo.
