Vermutería Clandestina opens in Quito, showcasing Ecuadorian vermouth
Colombian entrepreneur Carolina and Argentine partner Alejandro launched Vermutería Clandestina in Quito’s historic La Floresta neighborhood. After experimenting with homemade vermouths during the 2020 lockdown, they opened the bar in 2024, offering a tasting menu called “Vermut Andino” that includes six house‑made vermouths and two special selections. Signature drinks such as the “Floresta” blend red wine, caramel, flowers, nuts, wood and tonka for a distinctly Ecuadorian flavor profile. The venue pairs the drinks with a curated menu of olives, ham, cheeses and a Mediterranean tapa featuring house‑made bread, serrano ham, blue cheese, basil and balsamic reduction. Open Tuesday to Sunday from 16:00, the bar stays open later on Thursdays and Saturdays, providing a speakeasy‑style experience that highlights local ingredients and culinary traditions.
