At The Palm restaurant, Chef Trần Kiến Trung utilizes French and Mediterranean technical standards, supported by the Bocuse d’Or Vietnam Academy, to reinterpret local ingredients. Examples of this approach include combining beef with lá lốt and foie gras, or creating a seared sea bass dish that incorporates elements inspired by bún riêu.
Other innovations include using phở-inspired flavors in a dry-aged duck breast pesto, allowing diners to recognize traditional dishes through taste and aroma even when the physical presentation has fundamentally changed.
