In Dong Thap province, Lai Vung fermented pork (nem Lai Vung) has evolved from a local dish into a national intangible cultural heritage. Originating around 1960, the specialty is made from pork, pork skin, garlic, and chili, wrapped in banana leaves. The fermentation process creates a signature pink color and a balance of sour, sweet, and spicy flavors. The craft has supported local livelihoods for over 60 years and remains a popular gift, especially during the Lunar New Year.
