Vinegar technique improves egg frying texture

Adding a small amount of vinegar to a pan while frying eggs can improve the texture and shape of the egg whites. This culinary technique relies on the acetic acid present in vinegar to interact with the proteins in the egg whites.

The acid accelerates the coagulation process, causing the proteins to denature and reorganize more quickly. This results in a more compact and defined white that stays closely around the yolk rather than spreading excessively across the pan. This is the same scientific principle used when preparing poached eggs.

To avoid altering the flavor of the dish, experts recommend using only a few drops or a maximum of half a teaspoon of vinegar. Using mild varieties such as white, apple cider, or wine vinegar is suggested to ensure the acidity does not dominate the taste, instead serving to balance the greasiness of the oil or butter used for cooking.
