Watermans executive chef departs as menu shifts to Greek

Executive chef Darryl Martin has departed from Watermans, a two-hat restaurant in Barangaroo operated by the Bentley Restaurant Group. The departure comes less than a year after the venue's launch.

Martin attributed his decision to a combination of professional and personal factors, including diverging business perspectives and family health challenges following his wife’s diagnosis of a neurological disorder.

Concurrently, Watermans is shifting its culinary focus. The restaurant is moving away from its original eastern Mediterranean brief toward a modern Greek dining concept. Owners Brent Savage and Nick Hildebrandt described the transition as a “positive evolution,” noting that the menu already possessed a heavy Greek influence.
