Watermelon rind is edible and nutritious, experts say

The light green layer of a watermelon, located between the dark outer skin and the red flesh, is edible and nutritionally valuable. Experts from the Federal Center of Nutrition (BZfE) suggest that this often-discarded part can be used in various culinary applications.

This layer contains dietary fiber, Vitamin C, B vitamins, and potassium. While it has a firmer texture and a more neutral flavor than the red fruit, it can be utilized in juices, smoothies, stir-fries, pickles, or chutneys. For salads, the rind can be sliced into strips or cubes and paired with ingredients like spring onions, carrots, or cucumbers.
