White rice: safety and cooking tips to avoid bacteria

Proper handling and cooking of white rice are essential to prevent foodborne illness and improve flavor. Leaving cooked rice at room temperature can allow Bacillus cereus spores to survive and multiply, potentially causing vomiting, cramps, and diarrhea. To mitigate this risk, experts recommend rapid cooling and storing rice in airtight containers in a refrigerator set to approximately 4°C.

Regarding culinary quality, some chefs suggest that rinsing white rice may remove the natural starches that hold flavor. Instead of rinsing, cooking rice in hot broth with aromatics like onion, garlic, and bay leaves can result in a more flavorful, non-sticky accompaniment.
