Wrocław scientists reconstruct 200‑year‑old diet from dental calculus
Researchers led by Dr Paweł Dąbrowski at the University of Medical Sciences in Wrocław analysed the dental calculus of roughly 200 skeletal remains dating from the late‑17th to early‑19th centuries. The remains were uncovered in a multi‑layer cemetery on the Bulwary Książęce after demolition of the former Wojewódzki Hospital.
Microscopic residues trapped in the mineralised plaque revealed starches and phytoliths that allowed identification of the foods consumed. The diet was based on cereals such as wheat, rye, millet and barley, and legumes including peas and beans. Notably, traces of maize – a New World crop – and a gluten‑free wheat variety were also found. Animal products were scarce, though chickens were kept for meat and eggs. The study demonstrates how poor oral hygiene, which caused dental calculus, unintentionally preserved a detailed record of historic nutrition.
