Yannick Alléno and Institut Lyfe open Pavyllon Lyon

Chef Yannick Alléno and the Institut Lyfe have partnered to open Pavyllon Lyon, a unique restaurant-school located at Place Bellecour. This establishment marks the first Pavyllon restaurant-school concept in the world.

Designed as an innovation laboratory, the venue allows students to train in real-world conditions alongside professionals. The goal is to bridge high-end gastronomy with excellence in higher education. Yannick Alléno, recipient of the 2024 Michelin Guide Mentor Chef Award, serves as the culinary director. The kitchen operations are managed by Florent Boivin and Renaud Dutel, with daily leadership provided by Chef Clément Lopez and Operations Director Florie Ghibaudo.
