Yasaka Shuzo to launch edible rice Junmai Daiginjo in September 2026

Yasaka Shuzo, a brewery with 161 years of history, has announced that its “Shokumai Daiginjo” made from Nikoromai edible rice will be available for public purchase starting September 2, 2026. Previously released only as non-sale items for tastings and exhibitions, this Junmai Daiginjo will debut at the “Sake Festival” held at Osaka Takashimaya.

The brewery will also participate in “FOOD STYLE JAPAN 2026” at Tokyo Big Sight from September 30 to October 2, targeting food industry professionals including hotels and retailers.

Looking ahead to the winter 2026 brewing season, Yasaka Shuzo aims to further refine its process by polishing both Yamada Nishiki and Nikoromai rice to 35%. The company intends to explore whether advanced manufacturing techniques can minimize the differences in sake quality between different types of rice, testing the limits of brewing technology.
