Yoshida Shoten preserves legendary Tsuruga ramen flavors
In Tsuruga, Fukui Prefecture, a local food tradition is being preserved through Yoshida Shoten, a street stall ramen shop. The shop carries on the flavors of the legendary Ikeda-ya Gonchan, which is scheduled to close in August 2026 after 33 years of operation.
Yoshida Shoten was established by Mr. Yoshida, a former employee of Ikeda-ya Gonchan, allowing customers to experience the heritage of the original shop. Located along Honmachi-dori near the Al Plaza Tsuruga shopping center, the stall serves two main options: regular ramen for 1,000 yen and large servings for 1,200 yen. The menu features a soy-sauce based broth with a rich umami profile, served with yellow Chinese-style noodles, two thick slices of chashu pork, bamboo shoots, and green onions.
