Yozgat producers begin traditional Hasanoğlan grape harvest
In the Saraykent district of Yozgat, Turkey, local producers have begun the traditional grape harvest and molasses production process using the regional 'Hasanoğlan' grape variety.
The production follows ancestral methods: grapes are harvested and covered with molasses earth, then crushed by foot to extract the juice. This juice is subsequently boiled for hours in large cauldrons over traditional tandoors to create additive-free, natural molasses.
Local producer Mahmut Cengizer noted that the work, which began in the spring, is nearing its conclusion in October. The process provides essential winter supplies for families and contributes to the local village economy. Cengizer highlighted that the Hasanoğlan variety is distinguished by its thin skin and rich flavor, making it ideal for high-quality molasses production.
