Zaguby: A traditional potato dish from Podlasie
Zaguby is a traditional culinary specialty from the Podlasie region of Poland, specifically associated with the area around Drohiczyn. These potato-based rolls consist of dough filled with grated potatoes and are typically served with fried bacon and onions.
With a history dating back to at least the 19th century, the dish was originally prepared by less affluent families due to its use of inexpensive, readily available ingredients like flour and potatoes. The name is believed to derive from old terms related to folding or rolling dough. On April 20, 2021, zaguby were officially added to the List of Traditional Products by the Polish Ministry of Agriculture and Rural Development.
